Collar Butt is prepared from a bone in Shoulder Square Cut (Item 4029) by the removal of the ribs, thoracic, cervical vertebrae and the Shoulder Picnic (Item 4230). The Collar Butt is the dorsal portion remaining after the Shoulder Picnic has been removed. All bone cartilage, skin and fat is removed.
