Collar – Special Trim - 4245

Collar Butt - Special Trim is prepared from a bone in Shoulder Square Cut (Item 4029) by the removal of the ribs, thoracic, cervical vertebrae and the Shoulder Picnic (Item 4230). The Collar Butt is the dorsal portion remaining after the Shoulder Picnic has been removed. All bone and cartilage is removed. The skin is removed from the Collar Butt surface.

Specify the width and thickness of a strip of fat to be retained and running parallel to the dorsal edge the length for of the Collar Butt.

  • Specify length of tail distance from eye of meat.
